Herbes de Provence or Provencal herbs is a traditional blend from the hills of Southern France. It is wonderful if you have access to fresh herbs, but dried work well and is easier to find. The mixture can vary according to taste. It’s a good addition to any Mediterranean dish, especially ratatouille, or rubbed on a roasted chicken.
1 Tbsp. thyme
1 Tbsp chervil
1 Tbsp. rosemary
1 Tbsp. summer savory
1 tsp. culinary lavender buds
1 tsp. tarragon
1 tsp. marjoram
1/2 tsp. oregano (optional)
1/2 tsp. mint (optional)
2 powdered or chopped bay leaves
Mix all ingredients together. Store in a cool, dark cupboard. Makes about 1/3 cup herb mix.
